JetBlue reinforces commitment to exceptional hospitality and destination-worthy dining, with new menus available now; onboard July 31.

JetBlue is bringing the best of New York dining to 35,000 feet with the debut of its newest Mint® menus, created in partnership with two celebrated NYC restaurants: Crown Shy, the Michelin‑starred destination known for modern American cuisine, and Birdee, the Brooklyn bakery and café beloved for elevated comfort classics. Beginning July 31, 2026, travelers flying select Mint routes will enjoy restaurant‑quality dishes crafted specifically for the inflight experience.

A Culinary Collaboration Rooted in New York Excellence

Developed with Kent Hospitality Group, the new Mint menus reflect JetBlue’s commitment to delivering hospitality that feels personal, premium, and distinctly New York. Crown Shy Executive Chef‑Partner Jassimran Singh and Birdee Executive Pastry Chef‑Partner Renata Ameni worked closely with JetBlue’s culinary team to adapt signature dishes for altitude, preserving flavor, texture, and the emotional connection that defines each restaurant’s dining experience.

JetBlue’s Senior Vice President of Marketing and Brand, Stephanie Evans Greene, emphasized the goal: bringing two of New York’s most exciting restaurants directly to Mint customers.

Elevated Comfort to Start the Day

Birdee’s breakfast selections bring a playful, pastry‑driven approach to morning dining, including:

  • Strawberries & cream croissant

  • Mochi waffle with butter and maple syrup

  • Bacon, Egg & Cheese on a Parker House roll with harissa aioli

  • Shakshuka with cherry pepper relish and feta

These dishes showcase Birdee’s signature blend of nostalgia, creativity, and refined comfort.

Modern American Craftsmanship

Crown Shy’s contributions highlight bold flavors and meticulous technique:

  • Warm Parker House roll with olive labne

  • Crown Shy chicken with citrus‑marinated thigh and hot sauce vinaigrette

  • Pork katsu with hot cherry glaze and scallions

  • Razor clam chowder with roasted carrots and thyme

  • Sweet potato lasagnette with pecorino cream and chervil

Each dish is engineered to translate seamlessly to the inflight dining environment while staying true to Crown Shy’s culinary identity.

Desserts and Dietary Options

Dessert lovers will enjoy:

  • Chocolate tart with sabayon and port wine syrup

  • Strawberry olive oil shortcake with meringue and crème fraîche

  • Birdee’s warm chocolate chip cookie

JetBlue continues to prioritize personalization, offering vegetarian (V), nut‑free (NF), dairy‑free (DF), and gluten‑free (GF) selections across the menu.

Restaurant‑Quality Hospitality, Ready for Takeoff

The new Mint menus represent JetBlue’s broader strategy: elevating premium travel through authentic hospitality, cultural relevance, and partnerships with New York’s most innovative culinary creators. For many travelers, this will be their first taste of Crown Shy or Birdee, whether dining in Manhattan or cruising at altitude.

JetBlue’s Mint experience continues to evolve, blending exceptional dining with the airline’s signature warmth and attention to detail. With these new menus, the best of New York is officially boarding.
